National Turkey Neck Soup Day

Gobble, Gobble, Gobble! Does anyone eat the neck at Thanksgiving? Like me, probably not, but I do make soup out of it, and today we celebrate turkey neck soup day.

The turkey’s nickname is “Tom” because Benjamin Franklin always made fun of “Tom” Jefferson for not picking the turkey as the national bird.

Like any soup we make, it is the process that makes the soup great. Simmering the turkey neck to produce that flavorful stock, then breaking up the meat from the neck and a quick nibble, like a turkey leg, is all worth it. Next, add some nice mirepoix and “Bam!” you have a great soup on a cold day.
